Our 12 year old daughter found this recipe in a children’s cookbook when I was pregnant and very sick. I was sitting on the back steps with my head in my hands, trying to keep from throwing up when she asked if she could cook it for dinner. She said it had pickle juice in it with milk and hamburger, all things that sounded terrible at the time. However, since the kids had been surviving on popcorn, I thought she might as well try it because it was better than nothing (which is what I’d been cooking lately!).
To my surprise, everyone LOVED it! Today, it’s still a family favorite and every now and again I call my adult daughter and to my surprise, we will be cooking the same thing for our families. Mamas, this is one to ask your own kids to make for a family dinner. I hope you enjoy it too!
Quick Cheeseburger Pie
Ingredients:
1 1/3 cup flour
1/2 teaspoon salt
1/2 cup shortening
4 Tablespoons cold water
1 pound ground beef
1 small onion, chopped
1 garlic clove, minced
1/3 cup dill pickle juice
1/3 cup milk
1/2 teaspoon salt
1/4 cup flour
1/2 cup chopped dill pickles
2 cups cheese, shredded and divided
Directions:
Preheat oven to 425 degrees. In a bowl, mix 1 1/3 cup flour and salt. Cut in shortening until pea like size. Add cold water 1 tablespoon at a time, stirring with a fork. Mix until pastry like and sides of bowl come clean. Pat into bottom and sides of a 8-9 inch pie pan. Bake for 15 minutes.
Combine ground beef, onion, and garlic in a frying pan. Cook until onion is soft and meat is crumbled and browned. Drain grease.
Sprinkle ground beef with 1/2 teaspoon salt and 1/4 cup flour. Stir in pickle juice, milk, pickles and 1 cup of shredded cheese. Spoon mixture into pastry shell. Cover with remainder of shredded cheese. Bake for 15 minutes or until pastry is golden brown and cheese is bubbly. Enjoy!
