Growing up, my mother led us four siblings in making several kinds of cookies and candies for Christmas. We would make and bake thousands of pieces of sugary cheer to distribute to teachers, coaches and neighbors alike. We all LOVED the tradition!
Throughout the months of November and December we would make one treat every few nights and put them in the back of the unheated garage in tins, using mother nature’s refrigerator for storage. After sledding or hauling wood, we children would “help ourselves” to a treat that we were sure mom would never notice was missing! Once, I even had to risk squeezing around a hanging deer that my father had recently shot (because you know November in northern MN means hunting season!) Eww! Yet, I was determined to get that treat! The one item we always went for, and what tasted the best chilled was the Rocky Road Fudge.
It’s an easy, 4 ingredient recipe that your school-age children and teens can make and have at the ready when company comes too! I hope you enjoy it as much as I did growing up.
Rocky Road Fudge
2 cups chocolate chips
2 cups butterscotch chips
1 cup crunchy peanut butter
1 bag mini-marshmallows
Directions: Melt all chips together in microwave, 50% power for 30 second bursts. When chips look shiny, stir until smooth. Add peanut butter and marshmallows. Make sure all items are well mixed and pour into a greased or parchment lined 9″ x 9″ pan. Chill or freeze. Cut into small squares and serve cool.
